Lemon Blueberry Bread 11/30/14

  1. 1/3 cup of melted butter
  2. 1 cup of sugar

  3. 3 tablespoons of lemon juice
  4. 2 eggs
  5. 1 1/2 cups of all-purpose flour
  6. 1 teaspoon of baking powder
  7. 1 teaspoon of salt
  8. 1/2 cup of milk
  9. 2 tablespoons of grated lemon zest
  10. 1 cup of fresh or frozen blueberries


2 tablespoons lemon juice
1 tablespoon butter melted
1 cup confectioners sugar


Pre-heat oven to 350 degrees.

Combine and stir together wet ingredients except for the blueberries, i.e. butter, lemon juice, eggs, milk, lemon zest.

Combine and mix together the dry ingredients: sugar, flour, baking powder, and salt. Stir until blended well.

Combine wet and dry ingredients except for the blueberries. Stir until well blended.

Carefully fold in the blueberries until mixed well with the other ingredients.

Bake for approximately 35 minutes in a greased bread pan or until a toothpick comes out dry. Let stand for a few minutes.


The Glaze

Combine all ingredients drizzle over the top of the bread and spread as you would a cake icing.
