Pepper Steak with Rice

Ingredients
  1. 3 cups of hot cooked rice
  2. 1 lb. of lean beef round steak cut 1/2" thick
  3. 1 tbsp of paprika
  4. 2 tbsp of butter or margarine
  5. 2 cloves of garlic - crushed
  6. 1 1/2 cups of beef broth
  7. 1 cup of sliced green onions including tops
  8. 2 large green peppers cut in strips
  9. 2 tbsp of corn starch
  10. 1/4 cup of water
  11. 1/4 cup of soy sauce
  12. 2 large fresh tomatoes cut in 8ths




Procedure/Direction:
While rice is cooking:

Pound steak to 1/4" thickness
Cut into 1/4" wide strips
Sprinkle meat with paprika
Allow to stand while preparing other ingredients
Using a large skillet, brown mean in butter
Add garlic & broth
Cover and simmer 30 minutes
Stir in onions & green peppers
Cover and cook 5 minutes or more
Blend cornstarch, water, soy sauce
Stir into meat mixture
Cook, stirring until clear and thickened - about 2 minutes
Add tomatoes and stir gently
Serve over rice
