Potato Pancakes

  1. 6 large of potatoes
  2. 2 tbl of all purpose flour
  3. 0.25 tsp of baking powder
  4. 1.25 tps of salt
  5. 1 tsp of grated onion
  6. 1 cup of oil
  7. 1 small bowl of water
  8. 2 large of eggs

Grate potatoes coarsely into a small bowl of water.

Drain them fast an put on a towel.

Wring it to squeeze out as much moisture as possible. That should leave about 2 cupfuls of potatoes left.

Put in a bowl, heat them and stir in 2 eggs.

Then, in another bowl, sift together flour, baking powder and salt.

Add the flour mixture to the potatoes with the grated onion.

Fry batter by spoonfuls in about 1/4 inch of hot oil.

Turn and brown on the other side.
